We bake a lot in my house. Like, a lot . At least a few times a week I am preheating my oven, and it is not for dinner. During the summer, this passion of mine is hard to handle; you know, what with it being "surface of the Lord's day" hot outside. So, these cookies. Oh these cookies! They are amazing. I love a proficient sugar cookie, but add some pumpkin and a fiddling spice and these are to die for cookies! They held up to niggling hands and cookie cutters, held their shape after blistering, and stayed perfectly firm yet wonderfully soft, as a good carbohydrate cookie should. They are amazing alone, or decorated with frosting and sprinkles of course (as Koa prefers them.)

Pumpkin Spice Sugar Cookies

Ingredients

  • three 1/2 cups flour
  • 3 ane/2 tsp pumpkin pie spice
  • 1 tsp baking powder
  • ane cup butter (2 sticks)
  • 2/3 cup sugar
  • i/3 cup brown carbohydrate
  • 1/3 cup pumpkin puree (non pumpkin pie filling)
  • i egg
  • 1 tsp vanilla

Instructions

  • In a medium bowl, mix the flour, baking pulverization and 3 tsp pumpkin pie spice using a whisk. Set up aside.

  • In a small bowl, mix two tbsp flour and 1/2 tsp pumpkin pie spice. Use this to flour your surface. (You lot tin use simply flour if you want to.) Plough the dough onto your floured surface and gently knead the dough, making certain to contain any leftover flour.

Subsequently making these, Koa ate two that he decorated creatively (run across picture above) with various frosting colors and sprinkles. He then proceeded to ask, and couldn't understand why he could non, have "coooookies" for dinner.

Koa: I wuv coookies Mommy.

Me: I know you do.

Koa: I wuv these cookies Mommy.

Me: I know. Y'all ate 2 already. You lot're not having anymore.

Koa: Why?? Pweeese Mommy. I wuv you. (Yep he already knows how to do that at his wise old three years.)

Me: No. Two is plenty. Y'all need to eat dinner.

Koa: Cookies are good for dinner, Mommy. (As he walks towards the cookies, starting to grab one.)

Me: No! You're done with the cookies tonight. (I plough around to finish cooking dinner.)

Koa: (tranquility, too quiet. Never a proficient sign with a small child.)

I turn around to come across him on his stool, in one hand a plastic knife full of dark-green frosting entering his mouth and the other paw with his fingers in the sprinkles.

Me: Hey! What are you doing!? (OK, truth exist told I was trying really difficult not to laugh)

Koa: I not eating cookies Mommy! (Said with a mouth total of light-green frosting and sprinkles, but not a cookie…)
